Monaco plays host to some of the world’s top chefs, who infuse their dishes with the local abundance of hyperfresh ingredients. The shining jewel in Monaco’s culinary scene is Alain Ducasse’s decadent, three-Michelin-starred Louis XV at the 207-room Hôtel de Paris Monte-Carlo. There, Ducasse protégé chef Emmanuel Pilon showcases his years of experience in French kitchens through dishes such as marinated gamberoni (king prawns) with saffron rock fish gelée and caviar, and red mullet served with white asparagus, kiwi, and lemon leaves.

Virtuoso travel advisor Tiffany Layne ate her most memorable meal in Monaco at Les Ambassadeurs, inside the 125-room Hotel Metropole Monte-Carlo. With chef Christophe Cussac at its helm, the two-Michelin-starred restaurant specializes in modern Mediterranean cuisine, such as sweet langoustine tails and green beans in a maltaise (blood-orange hollandaise) sauce. Not to be missed are the restaurant’s impeccable bread and dessert trolleys. A bonus: “The private chef’s table had a view of the kitchen,” Layne says.

The Italian Mediterranean, dinner-turned-party Sass' Café beckons, known for its cozy baroque design, eccentric DJ sets, and celebrity sightings. Meanwhile, the daily Condamine Market caters to the Monégasque looking to procure fresh produce and a snack of barbagiuan, a savory fritter filled with Swiss chard and ricotta that’s a national specialty. At the low-key oyster bar Les Perles de Monte-Carlo, located on a pier in the Port de Fontvieille, travelers enjoy salmon, wild prawns, and ceviche with views of the Monaco Cathedral and the Oceanographic Museum. “Order a seafood platter for everyone to share, and you can spend an entire afternoon as the locals do,” says Virtuoso travel advisor Nick Moran.

Be sure to ask your Virtuoso advisor to book a table this summer at Amazónico, one of Monaco’s newest restaurants, which opens in April on the rooftop of the recently refurbished 150-year-old Café de Paris Monte-Carlo on the Place du Casino. Expect tropical, rain-forest-meets-Med decor and a menu of fresh seafood, fish, and grilled meats, similar to the brand’s outposts in Dubai and London. In July, the 278-room Hôtel Hermitage Monte-Carlo will open its new Japanese restaurant, L’Abysse Monte-Carlo, with French chef Yannick Alléno and sushi chef Yasunari Okazaki at its helm.
