The air on Santorini will give you an appetite. By combining the viticulture and the local foods on Santorini, you will complete your adventure satiated in every way. On your way to your cooking class you will stop at a volcanic vineyard to see the special way the Santorinis grow and harvest their grapes. Every trace of life was gone after the volcanic explosion between 1620 and 1640 BC. All that remained was covered in volcanic ash, lava and pumice stone, and together they created a compact soil called 'aspa'. Excavation of areas of the island found traces of past viticulture and wine storage but now a new way of growing grapes was needed on this island.
The only way for the grapes to survive from the direct exposure of sun and strong winds is to protect them inside low-basket-shaped vines, the "ampelies", as they are called locally forming a unique pruning system. You will see this unusual method that has set Santorini apart from all other methods of production and delivered much respect to the vineyards.
You will visit a winery that produces traditional wines representing the local Assyrtiko, Nykteri, and Vinsanto grapes. With the help of a local chef at an open air restaurant, you will prepare your own feast of classic Greek delicacies and island specialties. Sit down with this small group of new friends and toast with a glass of Ouzo to your meal, and then eat!
