We are honored to welcome international fromager Thomas Metin as our resident wine and cheese expert! Thomas managed the cheese counter at Harrods in London, ran a cheese shop in New Zealand and worked for the likes of Androuët and Laurent Dubois in Paris before taking charge of cheese selection at Lafayette Gourmet in Paris and St-Laurent du Var, just outside Nice.
Bilingual with an infectious enthusiasm for his subject, Thomas will take you on a voyage through the cheese regions of France, using perfectly-aged specimens to illustrate his points. He will also select the ideal wine to accompany each carefully chosen cheese.
Some wine and cheese tastings will focus on a specific family of cheeses, such as brie or comté, while others will include a selection from around France. As in all of Rosa’s classes, only the finest products from farmers who are passionate about their craft make the cut!
