Il Falconiere Relais & Spa

Silvia Baracchi welcomes you to Relais Il Falconiere & Spa, the 17th-century family home just outside Cortona. Visit as cherished friends, as the sommelier shows you his wine cellar and Silvia shares cooking secrets in hands-on classes. The 30 rooms and suites exhibit a simple Tuscan elegance; local talents are on display on frescoed walls and in antique furnishings and handwoven fabrics. The solar kitchen is where Michelin-starred Etruscan fare is created with ingredients sourced from the residence’s self-sufficient farm. Spa treatments feature products from Florence's Officina Profumo-Farmaceutica di Santa Maria Novella.

Sustainability
Our Commitment
My generation can and must take responsibility for what we will leave to our children and grandchildren, educating them to behaviors and practices aimed at protecting our planet both sea and land. A difficult part to carry on, perhaps because it is what we give as the most obvious, is to strictly follow exemplary behaviors, we know of the need for attention to protected species, but also the sea itself must be protected by so much plastic that invades them , and it should not be forgotten that protection must also be extended to the external environment in general. Our job as a chef should be to become ambassadors of this other aspect of sustainability and try to reverse, for example, the tendency to over-packaging that oppresses our waste and our seas. For this reason, having the good fortune to live just 20 km from Lake Trasimeno, I often also use lake fish as I believe in the importance of using and enhancing the products our lands offer.
