India’s most populous city is a dense, frenetic megalopolis that can’t help but inspire a sense of adventure. We’ll start our full-day immersion at one of its most iconic landmarks, the Gateway of India, built in 1911 on the occasion of a visit from the British royals. We’ll transfer to the Prince of Wales Museum, a monumental building designed in the fusion Indo-Saracenic style and showcasing some 30,000 pieces, from religious sculpture to miniature paintings.

After our visit we’ll re-board our coach and make our way to Churchgate, arriving in time to see the famed Dabbawalas in action: this fleet of lunch box couriers deliver over a half-million hot meals every day. The low-tech, manpowered system has been in use for almost 130 years and rarely sees errors.

Our next adventure will be a ride on Mumbai’s packed urban railway system, an authentic experience not to be missed. We’ll ride for about 15 minutes to Mahalaxmi Station, and rejoin the coach and make our way to lunch. We’ll pass Dhobi Ghat, a huge outdoor hand-laundry facility, and continue down Marine Drive and past Chowpatty Beach. We’ll arrive to the Oberoi, and recharge with an elegant lunch at Ziya restaurant.

Our last stop of the day will be Mani Bhawan, Mahatma Gandhi’s Mumbai residence, which has been converted into a museum. We’ll finish with some free time for shopping near the Taj Mahal hotel, before transferring back to the ship.

Suggested Attire/Walking Notes: Long pants for men and a skirt below knee length for women is recommended at Ziya. Moderate walking with some steps and inclines.

Sweet & Savoury Singapore: Hands-on Cooking Experience

Hungry? We hope so! It’s time to step into the kitchen and get to know Singapore through some of its iconic local dishes. Join us for a hands-on cooking experience where you’ll learn how to make popular Singaporean treats like chilli crab sauce and pandan chiffon cake, as well as snacks such as pineapple tarts and ondeh-ondeh, (a type of soft and chewy Asian dessert). We’ll start with Pandan chiffon cake, Singapore's most loved cake, has been touted as one of the world's best cakes. The highlight of this cake is pandan, which not only gives it a beautiful fragrance, but also its signature green hue. This light and fluffy chiffon of Asian origin might look unassuming, but every bite will definitely leave you wanting more. The chef will demonstrate how to put the cake together, so there will be nothing to distract you from learning his method.

Next up is demonstration on how to make chilli crab sauce — with a twist. Beer is widely used as an ingredient to whip up yummy dishes and we’ll be showing you how to use it to enhance our famous chilli crab sauce, served with crabmeat on a bed of salad. Even home cooks can master this dish with our winning and easy recipe! We’ll get hands on now with our next recipe, pineapple tarts, which are widely savoured during festive seasons such as Chinese New Year as pineapple, when pronounced in mandarin, means bringing good fortune. Lastly, you’ll get to make ondeh-ondeh from scratch.

The popular Asian dessert is soft and chewy thanks to the sweet potato and glutinous rice flour it’s made with. It is then filled with gula melaka (palm sugar) and covered with desiccated coconut. This authentic recipe is fuss-free and can be done in a short time. After all that cooking and eating, we’ll enjoy a teatime break with a refreshing drink.

Chinatown Food Adventure

Your Singapore food fest will begin at the Chinatown complex, the largest hawker centre in Singapore, with over 220 stalls. With all those options, you may feel a little overwhelmed, but you’ll have a knowledgeable local by your side to show you the ropes. Your guide will introduce you to the hawker centre and help you pick out some of the most authentic, tasty Singaporean treats. Savour the famous chicken rice along with delicious poh piah (fresh spring roll). Then try some mouth-watering local Chinese delights such as chwee kueh (water rice cake) with freshly crushed, ice cold sugar cane juice. While you chow down on your food, your local guide will be sharing with you some Singapore history, information about the city’s rich culture, and some local know-how on how this food is prepared. You’ll also learn how hawker centres came to be, and why this tradition is so close to the Singaporeans’ hearts. This tour is interactive – we encourage you to ask your local guide plenty of questions about all that you can see and taste.

After our first dose of deliciousness, we’ll take a stroll through the wet market to explore local food sources. Check out some interesting livestock and fresh ingredients used in our local food. Next, we hit the streets of Chinatown to we continue our Singapore tour. Learn about the history of the early migrants in this area, and how they came to settle and build their lives here. You’ll experience how people from all kinds of places live in harmony in Chinatown as we visit some religious sites dotted along the same street.

We take a respite from the outdoor heat with a visit to the air conditioned Urban Redevelopement Authority ( URA ) gallery to understand how the city planners built Singapore from a humble fishing village to a great cosmopolitan city! After all that exploration, we’ll finish up our Singapore tour with a freshly brewed teh or kopi tarik (pull tea / coffee) and a taste of Singaporean fusion with a tasty roti prata to complete our day tour. While you eat, your tour guide will fill you in on a few final bits of local knowledge, give you an opportunity to ask them any more burning questions you may have, and some tips and tricks for the rest of your time in the magical city of Singapore.

The Tiong Bahru Market, built in 1955, may be the first modern market to be built in a housing estate but still boasts some of the best hawker stalls for local culinary delights. The 90-year-old Qi Tian Gong Temple, Singapore’s oldest temple honours the Monkey God, who bestows blessing and protection.

Visit a bakery where time stands still. With a history spanning four generations, Galicier Pastry is steeped in family tradition using only the freshest ingredients, bought daily, to create Galicier’s traditional nyonya kuehs and retro cakes.

The design and décor of Nostalgia Hotel are inspired by Singapore’s colonial years as well as the romantic history of the neighbourhood. After all, Tiong Bahru was once known as an area where the well-heeled kept their mistresses. It’s the old world charm with a dash of modernism.

Portals of the past

Start off at the Civilian War Memorial, a structure dedicated to all those who perished during the Japanese Occupation of Singapore. Continue with a scenic drive around the Civic District, passing by the Padang, Singapore Cricket Club, historic Parliament House, Supreme Court and City Hall. Stop by the Lim Bo Seng Memorial, and let our guide narrate the story of this anti-Japanese resistance fighter.En route to Kranji war Memorial cementery dedicated to the men and women from United Kingdom, Australia, Canada, Sri Lanka, India, Malaya, the Netherlands and New Zealand who died defending Singapore and Malaya against the invading Japanese forces during World War II, it comprises the War Graves, the Memorial Walls, the State Cemetery, and the Military Graves.

Then, rekindle the memories at the Old Ford Factory. This historical building was the site where the British surrendered to the Japanese on 15 February 1942. A permanent exhibition gallery showcasing the memories of life during the Japanese Occupation was developed by the National Archives of Singapore. MOFF also houses the repositories of NAS.

Lastly, you will come to The Changi Chapel and Museum. Relocated in February 2001, it was built to honour the spirit and commitment of those who rose from the depths of adversity.

Over here, guests can have a taste of some of the local flavor food where it is called hawker food as you watch the locals pass by or doing their morning market errands.Next, travel to a local community estate. Tiong Bahru community centre located in a serene neighbourhood, surrounded by pre-war houses, a rare sight in modern Singapore. All community centres is managed by the People's Association (PA) and it aims to offers a wide range of programs to cater to Singaporeans from all walks of life - connecting people to people, and people and government. As you walk to the centre, you will see HDB flats where about 85% of Singaporeans live in such houses. These flats are located in housing estates, which are self-contained satellite towns with schools, supermarkets, clinics, hawker centres, and sports and recreational facilities. There are a large variety of flat types and layouts which cater to various housing budgets.Thereafter, identify Singapore's local living. Visit the HDB hub where guests can see an actual typical size and interior furnishing of a regular HDB flat ranging from 2 - 5 room flats.
