The Riddler, New York City 

Caviar service with potato chips and “cham-bongs” (Champagne beer bongs) add a sense of fun to the fizz at The Riddler. The buzzy West Village bar – an outpost of The Riddler’s original location in San Francisco – nods to the woman who invented riddling (a process that removes sediment from Champagne bottles), and its team of distaff investors includes food legend Ruth Reichl.

As if Champagne weren’t heady enough, now New Yorkers can sip it suspended in midair: Part of the Hudson Yards complex (also home to the new Equinox Hotel, New York City), the aptly named Edge – which bills itself as the Western Hemisphere’s highest observation deck – clings cantilevered from a skyscraper 100 stories above the city. Frameless glass walls and a glass floor add to the floaty feeling.

Showgoers are applauding the rotating seasonal Champagnes at 28°-50° Covent Garden, served with sophisticated bar bites amid black-and-white vineyard photos in the heart of Theatreland.

Sip, the Scarlet Lady 

Yo-ho-ho, and a bottle of bubbly! Virgin Voyages calls Sip, aboard its forthcoming Scarlet Lady, “a luxuriously effervescent Champagne lounge and caviar bar.” With an indigo banquette wall and a rose-gold-inlaid Carrara marble bar, Sip’s surrounds are as stylish as its signature drink. The Scarlet Lady is currently set to sail its maiden voyage in October 2020.
